The villas we offer in this area are surrounded by gorgeous landscape and the famously friendly culture. So what better way to celebrate Barbados than by enjoying their delicious cuisine? We’ve asked an authentic chef from Barbados to give us an exclusive Mahi Mahi recipe.
Chef Wendell was born and raised in St. Phillips, Barbados, where you’ll find the most beautiful local beaches. He discovered a passion for cooking at an early age and was taught his authentic skills by his mother and grandfather. After relocating to Ottawa, Ontario, he felt even more inspired to use flavours from Barbados and open up his own successful catering business, Take Home Barbados Chef.
He’s created a recipe that will transport you to a breezy afternoon in a beautiful Barbados villa.
Mahi Mahi served with sautéed potatoes and fresh tomatoes (serves 2)
You will need:
2 Mahi Mahi fillets (or any fresh white fish)
2 large English white potatoes
3 tomatoes – medium ripeness
Fresh thyme
Paprika
Black pepper
Curry powder
1 lime
Instructions:
Before you begin preparing the fish, pre boil your potatoes for about 10 minutes
To prepare the fish, rub thyme, salt and a pinch on curry. Squeeze about half of the lime over the fish. Place in a medium-hot pan and lightly brown on both sides. Then place the fish in a preheated oven of 350 for about 20 minutes.
Take the pre boiled potatoes and sauté them in a pan with a dash of paprika, black pepper, and curry powder. Toss the potatoes until fully cooked and add the tomatoes during the last few minutes.
Serve the fish on top of the potatoes and tomatoes, garnish with chives, salt and pepper, or anything that inspires you! Eat, enjoy, and feel inspired by the beautiful Barbados.
